Things change more than they stay the same in Los Angeles. Nevertheless, there are the companies and business operations –such as the Walt Disney Co., which is still a Burbank mainstay, or Ralph’s, which now belongs to a national chain but remains operationally in Compton – that can refer to themselves as centenarians. Some have undergone transformations of their own since they first incorporated. Others look essentially the same. Among them are, of course, the many classic L.A. restaurants, but there are also tailors, utility operators and social clubs.
