I worry about climate change a lot, and what the next generation is going to have to struggle with as far as droughts, flooding, super storms, shifting economics, etc. It’s incredibly frustrating that there are still politicians who are outspoken climate-change deniers, but we hope clearer minds will prevail before it’s really too late.

From my perspective and that of most educated persons that I know, climate change is a fact. The debate is settled. More importantly, it is an increasingly global issue that requires international cooperation to affect change. It is all well and good if the United States builds lots of renewable energy projects (and we should), but if developing nations are building twice as many coal plants, well, we still have a major problem on our hands.

Climate change has a direct impact upon the crops we grow, livestock we raise, the marine life we harvest and, thus, the foods that I serve as a chef-butcher. The only real way for my industry to directly combat climate change is through alternate methods of farming, fishing, and ranching, the nontraditional or natural way.

Yes, I’m very concerned because it drives up prices of food along with packaged goods. With Southern California not having enough rain, it has a major impact on food costs for diners.

I’m extremely worried about global warming, and I think evidence is rapidly growing to show that global warming is a very real danger. I doubt the full effects of global warming will be seen in my lifetime but the damage that’s already been done now is still more than I care to see.
