Stefanie Gaxiola has found fame. Though, if truth be told, it’s a bit cheesy.

The 24-year-old Redondo Beach student is the first person to have an item on the Cheesecake Factory menu named after her, specifically Stefanie’s Ultimate Red Velvet Cake Cheesecake.

Her entry was picked from among more than 10,000 received in the chain’s What’s Your Flavor? cheesecake contest earlier this year to promote sales amid the downturn.

Entrants submitted their own recipes for the perfect cheesecake. After surviving judgment by the Calabasas company, the five finalists were put to a public vote online.

“I’m a baking enthusiast so I’ve done all kinds of things, but never a cheesecake,” admitted Gaxiola, who said she chose her ingredients from the best red velvet deserts she’d ever tasted. The result soft red velvet cheesecake with a cream cheese frosting and white chocolate curls debuted July 30 at the chain’s 146 restaurants for $7.95 a slice.

“It’s my new favorite cheesecake,” said the student, a child development major at Loyola Marymount College who now admits to eating a piece every day.

Is she afraid of gaining weight?

“Luckily,” the svelte cheesecake lover avers, “I work out a lot.”
